
1. Wash and cut potatoes. Place in boiling water for 10 – 15 minutes or until easily punctured by a fork.
2. Mix thoroughly: mint pesto, fig vinegar, garlic powder and onion salt. Set aside to let flavors blend.
3. Mince red onion.
4. Drain potatoes and allow to cool.
5. Place potatoes and onions into a large bowl. Pour in pesto dressing and mix gently. Refrigerate until serving.
