Mint Pesto Burgers

 1 lb ground lamb and/or beef
  cup mint pesto
 1 cup crimini muchrooms, sliced
 3 oz goat cheese
 2 tomatoes for slicing
 2 tbsp butter

1. Prepare pesto, remove ⅓ c. for recipe and store the rest.
2. Mix pesto into ground beef. Form into 4 patties and refrigerate for 10 – 20 minutes.
3. Sauté mushrooms in 2 Tbsp. butter.

4. Meanwhile, heat the large skillet.
5. Cook the burger patties, with a sprinkling of salt for 3 – 5 minutes.
6. Turn and add goat cheese to patties. Cook for 3 – 5 minutes.
7. Serve with sliced tomatoes, sautéed mushrooms, catsup and mustard on hamburger buns. Bacon and lettuce are great additions!
